Pan Roasted Yellow Squash

A fast and healthy side vegetable, this dish serves 2, but can easily be expanded . Simple to prepare, it brings out the natural flavor of the squash. Change it up by adding a pinch of your favorite herbs or spices.

2 yellow squash, in ¼ inch slices
1 small onion, in ¼ inch strips
1 small clove garlic, minced
1 Tbsp olive oil
Salt & pepper
Heat olive oil in a large skillet. Add onions and squash and
sauté on high heat flipping often until they start to lightly
brown. Add garlic, salt & pepper and continue cooking for
a few more minutes. Enjoy!
