A southern classic, everyone has their own special recipe for collard greens. Here's a good starter recipe that can be adapted to anyone's taste - you may want to add vinegar instead of wine, or use less sugar - any way you make them, they're delicious!

1 bunch collard greens
¼ cup soy sauce
¼ cup sugar
2 T white wine
1 T chopped garlic
2 tsp salt
*optional - hot sauce or
cayenne pepper
- Rinse collards and cut coarsely, removing thick stems.
- Add sugar, white wine, soy sauce, hot sauce or cayenne (if
using) and collards to an appropriate sized pot.
- Cover with water and bring to a boil stirring occasionally.
- Add chopped garlic and salt; let boil for about 5 minutes.
- Cover and reduce heat to low, stirring occasionally & adding
water as needed to keep greens from sticking to the bottom.
- Cook about 1 hour or until tender.
