Bacon-wrapped Stuffed Mushrooms
So it's no secret that we love bacon - mmmm bacon! Here's a little recipe we created
that's great for guests (so you don't eat them all yourself!)
8 oz mushrooms, white or baby bellas
¼ onion, diced finely
2 to 3 Tbsp feta, crumbled
4 whole, pitted black olives, diced finely
Half strips of bacon
Remove stems from mushrooms and dice finely (including any broken caps).
Saute onions and stems until tender, remove from heat and let sit 2 minutes
Add olives and feta, mix well
Spoon into caps, wrap each cap with ½ strip of bacon and cook for 20 minutes or desired crispiness
Preheat oven to 375 degrees
